Ingredients

  • Carrots - 4 sliced
  • Red Cabbage - 1/2
  • Red Onions - 2 sliced
  • Mint - Handful
  • Coriander Leaves - Handful
  • Roasted Peanut - Handful
  • Lime - Juice of 2
  • Ground Nut Oil - 1 tablespoon
  • Red Chilli - 1 chopped
  • Brown Sugar - 1 tablespoon

Instructions

  • step 1 Tip the carrots, cabbage and onions into a bowl.
  • Make the dressing by stirring the ingredients together until the sugar has dissolved.
  • Pour over salad, tossing the vegetables in the dressing.
  • Add the herbs, toss again, then scatter over the peanuts.
